Vegetarian Chili with Beans and Tofu – Ingredients:

– 1 tablespoon olive oil – 1 onion, diced – 2 cloves garlic, minced – 1 bell pepper, diced – 1 zucchini, diced – 1 cup corn kernel – 1 can kidney beans, drained and rinsed – 1 can black beans, drained and rinsed

Instructions:

– 1 can diced tomatoe – 1 can tomato sauce – 1 cup water – 1 tablespoon chili powder – 1 teaspoon cumin – 1 teaspoon paprika – 1/2 teaspoon salt – 1/4 teaspoon black pepper – 1 block firm tofu, drained and diced

Instructions:

1. Heat the oil in a large pot over medium heat. Add the onion, garlic, bell pepper, and zucchini and cook until the vegetables are soft, about 5 minutes.

2. Add the corn, beans, tomatoes, tomato sauce, water, chili powder, cumin, paprika, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.
