Spinach Soup Ingredients
- Spinach (washed with stems removed): 2 large bunches chopped
- 1 tsp butter or oil
- 1 tbsp roughly chopped garlic
- 1 Onion finely chopped
- Milk (skimmed or low-fat): 1 cup
- Water: 1 cup
- Black pepper grounded: 1 tsp
- Salt to taste
Cooking Instructions
- Boil the half milk with half the water and blanch the spinach in it for 2 minutes and puree after getting cold.
- Heat the butter in a pan, add the onions and garlic and sauté on a medium flame for 1 to 2 minutes.
- Add spinach puree with the Remaining half milk and half water.
- Keep it on a simmer flame for about 10 minutes and keep stirring in between.
- Add salt and black pepper for 2 more minutes.
- Serve hot with 1 teaspoon of cold rice.
